Here’s Why This Salad Boosts Your Immunity

I wanted to do a spin on the traditional Greek Salad and make it Vegan and Paleo since dairy doesn’t always agree with me. This Immune Boosting Vegan Greek Salad is so refreshing and is perfect for lunch or dinner. I added lot’s of dark leafy greens like spinach, arugula and parsley to help boost your immune system as well as lots of lemon for a boost of vitamin C. Spinach has minerals like vitamin E and magnesium that support immunity so eat up! It can also help reduce blood pressure levels and oxidative stress and may benefit eye health. This leafy green is also very high in soluble fiber which is great for your digestive system. Listen up all pregnant woman and mama’s to-be! Spinach has the very essential nutrient folate (or folic acid) in it which supplies your baby with the nutrients he or she needs to develop a healthy brain and prevent Spina bifida.

Parsley! I just love this herb, and it’s so good for you! This delicious green can reduce bloating and blood pressure. It’s also loaded with vitamin K which has been linked to bone health. Something we should all pay attention to. Greek salad just wold be be the same without crisp shilled cucumbers. These little babies add antioxidants to your bowl which help fight free radicals that can cause cancer, disease and aging. I made sure to toss in a couple tomatoes too, which are high in vitamins B and E and have a lot of potassium. But wait, I almost forgot my favorite ingredient… Kalamata Olives! These delicious salty olives are rich in antioxidants and healthy fats which have been linked to many amazing healthy benefits including lowering your chances of developing heart disease. My addicting Vegan Greek Dressing recipe calls for Extra Virgin Olive Oil which is amazing for the skin and goes beautifully with this salad!

Immune Boosting Vegan Greek Salad

Servings: 1 Salad, 10 Dressing Servings

Ingredients

Crunchy Gluten-Free Almond Cookies
  • 2 handfuls organic spinach
  • 1 handful organic arugula
  • 1 Tbsp chopped organic parsley
  • 5 organic Kalamata olives
  • 1/2 organic vine tomato sliced
  • 1/2 organic medium cucumber sliced
Vegan Greek Dressing
  • 1/2 cup EVOO
  • 4 Tbsp fresh lemon juice
  • dash of garlic power
  • 2 tsp dried oregano
  • S+P to taste

Instructions

1. Wash all salad ingredients and add to a large bowl.
2. Add all dressing ingredients to a small bowl and mix thoroughly.
3. Drizzle dressing on salad and eat immediately!
