Lemony Spring Salad
My Lemony Spring Salad is perfect for lunch or a side salad for dinner. The crisp texture of the romaine, peppery flavor of the radish and tart taste of the lemon enlivens this dish. It’s a fresh and crunchy way to satisfy any growl.
Red radishes are loaded with vitamins E, A, C, B6, and K. They are also high in antioxidants, fiber, zinc, potassium, phosphorous, magnesium, copper, calcium, iron and manganese.
You can eat radishes raw, or roast them with EVOO and a little salt + pepper. I highly recommend using this dressing! It’s one of my absolute favorites. It has clean ingredients like apple cider vinegar and turmeric for example. This dressing adds the perfect amount of lemony flavor while also incorporating an anti-inflammatory element. You may become addicted to this dressing, I’m just warning you! It will make you want to eat more salads, and that’s a good thing 🙂

- Chopped parsley or basil (optional)
- Celtic salt + pepper
