Delicious Gluten-free Vegan Almond Cookies
My Crunchy Gluten-free Almond Butter Cookies are Paleo and Vegan so get ready to snack without the bloat… or guilt! They are only made with 4 ingredients too which makes for an easy clean up. All you need is some almond butter (or any nut or seed butter), almond flour, honey and cinnamon. These yummy cookies bake up in just 10-12 min and are crunchy on the outside with a chewy inside 🙂 MMMMMMM!!!
Paleo Baking Ingredients
If you’re new to Paleo or gluten-free baking, you may want to order yourself some almond flour to keep on hand. I like this almond flour because it’s a great deal and will last you a long time. Trust me, it’s more cost effective buying a larger portion. These nut flours get pricey when you buy them in small bags at the store. You’ll also need a cookie sheet + some parchment paper. I like to use the unbleached, chlorine-free parchment (isn’t that crazy that some brands use chemicals in their parchment?!). Check this brand out! It’s my go-to. Alright, grab a mixing bowl + a whisk and let’s get to it!
Almond flour can help lower LDL “bad” cholesterol and raise HDL “good” cholesterol. The Omega-3 fatty acids in almonds can also benefit the heart and help prevent irregular heart rhythms.

These delicious almond butter cookies are perfect for a mid-afternoon snack or dessert! Since there’s a high (healthy) fat content, 1 cookie will help keep you satiated while providing essential skin + heart healthy Omega-3 fatty acids to your diet.
