Blueberry Jam + Sunbutter Stuffed French Toast

I was in the mood for something decadent + delicious this morning! Most mornings I wake up, drink a glass of water and blend up my fav protein smoothie. That’s because I’m usually heading out the door to teach a fitness class, so I don’t want anything too filling before class. If you need some Inso for quick, healthy + nutrient packed protein smoothies, check them out here! Saturdays are usually the days to switch up my breakfast routine with something fun! I love making my Paleo Smoked Salmon Eggs Benedict, you should try it! When I have a sweet tooth, or I’m in the mood for a more satisfying, carb-y breakfast, I make my Blueberry Jam + Sunbutter Stuffed French Toast!

Canyon Bakehouse has amazing gluten-free bread! You can find it in the freezer section of your grocery. They have a few different kinds like Cinnamon Raisin, Mountain White (which is what I used here) and 7 Grain to name a few.

This dish is a little bit of a cheat if you’re strict Paleo, but it IS gluten-free. This bread uses brown rice and tapioca flour as the main ingredients. It’s soy free and I don’t feel bloated after having a slice or 2. Be careful though, it can be addicting! Although I do make this recipe once in a while, it’s a cheat meal for me. I try not to eat bread every day, even if it’s gluten-free. It still has a decent amount of carbs in it. However if you’ve had an active day or week, there’s no reason to feel guilty for enjoying this type of cheat meal! It’s about as clean as you can get while cheating! You can use any jam or jelly and also any nut butter of your choice! Additionally, any gluten-free bread will do here. I will note that I do recommend using Pasture Raised Eggs. When it comes to eggs, I simply don’t trust anything BUT pasture raised. Remember, you are what you eat, and you’re also what the chicken ate! If the chickens are fed soy + grains, guess what your’e eating? Yup… soy + grains. Even if you’re not Paleo, you still don’t want to consume hormones and antibiotics that are often administered to “cage free” and “free range” chickens. If you have a local farm nearby I would recommend buying from them, or try this brand. If you’re vegan, you can use a Vegan Egg or simply substitute the egg for coconut oil in this recipe.

Blueberry Jam + Sunbutter Stuffed French Toast

Prep time: 7 Minutes
Cook time: 6 Minutes
Total time: 13 Minutes
Servings: 2

Ingredients

  • 4 slices Gluten-free Canyon Bakehouse Mountain White Bread
  • 2 Pasture Raised Eggs (or 2 TBSP coconut oil or vegan egg)
  • Pinch of cinnamon
  • Pinch of Celtic Sea Salt
  • Pinch of Coconut Sugar
  • 2 TBSP coconut oil (for skillet)
  • Splash of dairy free milk (I used coconut)
  • 2 TBSP Sunbutter (1 TBSP per sandwich)
  • 2 TBSP Blueberry Jam (1 TBSP per sandwich)

Instructions

1. Heat a cast iron skillet on medium, add 1 TBSP coconut oil
2. Assemble your sandwiches with sunbutter + jam.
3. Beat your eggs (or melt coconut oil if using for Vegan option), add cinnamon, salt + sugar to the eggs and whisk until combined.
4. Place each sandwich into the egg mixture and evenly coat both sides.
5. Place the sandwiches onto the preheated skillet and cook for about 3 minutes per side, until golden brown.
6. Serve with a sprinkle of cinnamon on top and dig in!

You may need to adjust cooking time. Make sure to to burn your bread. The bread should be golden brown and crispy on both sides!
