Crunchy Kale + Fennel Salad
If you’ve been craving a crunch, you’ve come to the right place! My Crunchy Kale + Fennel salad has all the crunch to satisfy your hankerings! I use the bulb of the fennel plant in this salad. The beautiful long stalks and fronds can be used as well. Sometimes I add the fronds into my salads and soups, and freeze the stalks to simmer in a vegetable broth. When fennel seeds are eaten on a regular basis, they provide the body with valuable minerals like zinc, calcium and selenium. These minerals help balance hormones, increase immunity, strengthen bones, and help increase oxygen levels in the blood – giving your skin a natural glow!
Fennel has been found to reduce blood pressure, water retention and asthma symptoms. It’s high in vitamin A which is an essential nutrient that supports skin, eye, reproductive health, and immune function.
This delicious vegetable has a sweet, fragrant, anise-like flavor. Don’t worry if you’re not a licorice fan, many people who don’t like licorice love the taste of fennel!
