Gluten Free Chocolate Chip Banana Bread

Banana bread is one of those staple recipes that everyone should have in their back pocket! I love adding chocolate chips and walnuts to mine 🙂 The rich dark chocolate mixed with the fruity banana and crunchy walnuts makes for a truly satisfying flavor profile. The darker the bananas, the sweeter the bread. As bananas start to brown, their natural sugars become more concentrated, resulting in beautiful notes of honey and vanilla.

Bananas are high in magnesium + potassium. Just one medium-sized banana provides about 13% of your daily recommended manganese. Manganese helps your body make collagen + protects your cells against free radical damage. Potassium helps your body maintain a healthy heart and blood pressure.

Sometimes I add unsweetened raisins to my banana bread. You can substitute the chocolate chips for raisins in the recipe if you want more of a breakfast feel to your loaf. Either way you really can’t go wrong with this flavorful gluten-free, low sugar banana bread! I hope you enjoy it!

Gluten Free Chocolate Chip Banana Bread

Ingredients

Gluten Free Chocolate Chip Banana Bread
  • 3 medium ripe bananas, mashed
  • 1 tablespoon honey
  • 1 tablespoon vanilla extract
  • 1/4 cup raw almond butter
  • 2 tablespoons coconut oil, softened
  • 2 eggs, at room temperature
  • 1/2 cup coconut flour
  • 1 tablespoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon Celtic salt
  • 1 cup Enjoy Life Dark Chocolate Chunks

Instructions

1. Add wet ingredients to a mixing bowl and mix until blended (first 6 ingredients).
2. Add dry ingredients to a separate bowl and whisk until well incorporated.
3. Add wet ingredients to the dry and mix well. Add chocolate chunks.
4. Preheat the oven to 350 degrees fahrenheit and prepare a 9 X 5 loaf pan with parchment paper (so that the loaf doesn't stick, and you can easily remove it from the pan:)
5. Bake for 50 minutes, or until slightly browned and crusted on the top. Insert a toothpick into the bread when finished baking. It should come out clean when done.
6. Let cool for 20 minutes before lifting out of the pan and slicing. Enjoy with a glass of unsweetened vanilla flax milk!

Make sure to check your loaf half way through (at about 25 minutes). Not all ovens are alike, be careful not to burn your bread! Store in an airtight glass container in the fridge for 5 days.
