Gluten-Free Dark Chocolate Chip Banana Bread

Gluten-free Banana Bread with a Twist!

Who doesn’t love banana bread?! I’ve been gluten-free for almost 10 years now (besides my occasional “cheat meal”:) and admittedly I have a weak spot for Paleo baking! My Gluten-Free Dark Chocolate Banana Bread has Enjoy Life Mini Dark Chocolate Chips inside as well which makes each slice rich + delicious! I used maple syrup in this recipe (you can sub for honey if preferred) which lightly sweetens this beautiful bread naturally. Add a scoop of your favorite nut butter (I used Sunbutter) and sprinkle the top with cinnamon and coconut sugar and now we’re talkin’!

Paleo Baking is Easy!

Even if you’re not a baker, there’s no need to worry! This gluten-free treat is super easy to make, and will have your family wondering if it’s “really gluten-free!” It only takes 15 minutes to put this gorgeous loaf together and then all you have to do is pop it in the oven to bake for 60 minutes. Sit back and enjoy the tantalizing aroma of fruity bananas, rich dark chocolate + cinnamon perfuming your home 🙂 The hardest part is waiting for this yummy bread to cool before taking it out of the pan!

Gluten-free baking has changed my life. I no longer feel bloated, lethargic or overly-full after eating gluten-free baked goods, which makes my tummy + digestive track ever so grateful!

Gluten-Free Baking Ingredients

This recipe uses Coconut Flour which is usually tough to bake with as it can sometimes be a bit dry and leave you with a “crummy” outcome (pun intended:). However this recipe has lots of moist components like ripe bananas, coconut oil and sunbutter that offset the coconut flour. I used Vermont Maple Syrup  in this recipe but you can substitute for raw honey if you prefer. Try this coconut oil instead of butter too, it’s a great dairy-free option for baking! If you’re in need for a good loaf pan, I have THIS ONE and love it!

Gluten-Free Dark Chocolate Chip Banana Bread

Ingredients

Gluten-FreeDrak Chocolate Banana Bread
  • 2 large bananas
  • 2 tablespoons maple syrup (or honey)
  • 1 tablespoon vanilla extract
  • 1/4 cup sunbutter (or fav nut butter)
  • 2 tablespoons coconut oil, softened
  • 2 eggs, at room temperature
  • 1/2 cup coconut flour
  • 1 tablespoon cinnamon
  • 1/2 teaspoon gluten free baking soda
  • 1/2 teaspoon gluten free baking powder
  • 1/4 teaspoon salt
  • 1 cup enjoy life mini dark choc chips + 2 Tbsp chips sprinkled on top
  • Sprinkle of cinnamon + coconut sugar on top (optional)
  • 1/4 cup chopped dark chocolate bar for topping (optional)

Instructions

1. Preheat oven to 350° and prepare a loaf pan with parchment paper.
2. Add wet ingredients into a small mixing bowl and mix until blended.
3. Add dry ingredients, then fold in the dark chocolate chips.
4. Add toppings (cinnamon, coconut sugar and/or chopped dark chocolate bar).
5. Bake 50-60 min rotating half way through. Insert a toothpick into the center of the loaf to ensure it's cooked through. The toothpick should come out clean.
6. Let cool for 30 minutes before lifting it out of the pan. Slice + Enjoy!

Store in fridge for up to 7 days.
