New Year’s Day Veggie Skillet
My New Year’s Day Veggie Skillet is the perfect dish to start the year off right! You can make this for brunch and add an over easy egg to the top when serving for a little extra protein.
This veggie stir fry has lots of asparagus in it! Asparagus is a great source of folate, also known as vitamin B9. Just 1/2 a cup of asparagus provides adults with 34% of their daily folate needs and pregnant women with 22% of their daily needs! Folate is an essential nutrient that helps form red blood cells and produce DNA for healthy growth + development. To ensure healthy development of the baby, folate is especially important during the early months of pregnancy. So eat up mamas!
You can make this Veggie Skillet for breakfast, lunch or dinner! I love adding a splash of coconut aminos on top when serving. It adds a little extra kick of flavor!
