New Year’s Day Veggie Skillet

My New Year’s Day Veggie Skillet is the perfect dish to start the year off right! This skillet is made with wholesome, organic vegetables that will feed your soul just as much as your tummy 🙂 Flavored with savory winter seasonings like rosemary, thyme and sage, you’ll feel right at home and ready to dig in! You can make this for brunch and add an over easy egg to the top when serving for a little extra protein.

This veggie stir fry has lots of asparagus in it! Asparagus is a great source of folate, also known as vitamin B9. Just 1/2 a cup of asparagus provides adults with 34% of their daily folate needs and pregnant women with 22% of their daily needs! Folate is an essential nutrient that helps form red blood cells and produce DNA for healthy growth + development. To ensure healthy development of the baby, folate is especially important during the early months of pregnancy. So eat up mamas!

You can make this Veggie Skillet for breakfast, lunch or dinner! I love adding a splash of coconut aminos on top when serving. It adds a little extra kick of flavor! If you’re looking for a healthy, gluten-free side dish (or main) I’d definitely recommend this bright and cheery New Years Day Veggie Skillet!

Vegan Roasted Carrot Ginger Soup

Prep time: 15 Minutes
Cook time: 20 Minutes
Total time: 35 Minutes
Servings: 10

Ingredients

New Years Day Veggie Skillet
  • 2 Tbsp olive oil
  • 1 medium sweet onion
  • 5 cloves garlic, minced
  • 2 medium sweet potatoes
  • 1 bunch asparagus
  • 1 handful kale
  • 1/2 tsp fresh rosemary, minced
  • 1/2 tsp fresh thyme
  • 1/4 tsp dried sage
  • Celtic salt + pepper to taste
  • Parsley + coconut aminos for serving

Instructions

1. Add olive oil to your pan and heat on medium. Chop the onions and mince garlic. Add to the pan and cook until slightly browned and fragrant.
2. Cut sweet potato into half moons and add to the pan. Cook until slightly browned (about 5 min).
3. Cut ends off of asparagus and cut into 1" long pieces. Add to the pan and cook for a few minutes until slightly soft.
4. Add seasonings and stir. When just about done, add the kale and cook for 1 min more until just wilted.
5. Serve with parsley and Coconut Aminos!
