Paleo Chocolate Peppermint Fudge Brownie Cake
This Paleo Chocolate Peppermint Fudge Brownie Cake is decadently delicious and fudgy! It’s so easy to make and if you’re a chocolate lover like me, I can almost guarantee you’ll want to go back for seconds! I chose to top my cake with crunchy, nutty walnuts reminiscent of chocolate fudge brownies of course! You can also top it with minty crushed candy canes, or with a superfood like cacao nibs or another nut of choice!
Raw organic cacao is high in fiber and promotes healthy digestion. Cacao powder is packed with health boosting flavonoids. It’s nutrients have been shown to help lower blood pressure, improve blood flow to the brain and heart, and aid in preventing blood clots.
This low sugar, gluten-free fudgy brownie cake is perfect for any occasion but I especially love it around the holidays! Chocolate and peppermint remind me of all the festive drinks at Christmas. Although I stay far away from the artificially flavored Starbucks Peppermint Mocha lattes etc… they always sound so good! I just wish they were made with natural ingredients. The Cake
- 1 cup Enjoy Life Dark Chocolate Chips
- ½ cup coconut oil
- ¾ cup monk fruit (sub stevia or coconut sugar)
- ¼ teaspoon Celtic salt
- 1 teaspoon peppermint extract
- 3 pasture raised eggs (beaten)
- ½ cup raw cacao powder
Chocolate Ganache
- 1 cup Enjoy Life Dark Chocolate Chips
- ½ cup full fat coconut milk
- ½ cup chopped walnuts (or topping of choice)
