Very Berry Coconut Trifle

Are you ever in the mood for something that tastes sinfully delicious yet is somehow healthy?! If so, you must try my Very Berry Coconut Trifle! I use unsweetened coconut “yogurt” (which is Vegan, Paleo and Keto) as the base, and add chia seeds for an extra antioxidant, fiber + protein punch! The chia seeds expand in the coconut yogurt, giving this trifle a little more density which also leaves you with a sense of satisfaction.You can add a dollop of raw organic honey and a pinch of cinnamon to your yogurt if you like! I love this brand of eco-friendly honey!

Any berries will do in this recipe, however I used organic strawberries and blueberries. Wake them up with the zest of an orange and a squeeze of it’s sweet juice, adding an extra pop of vitamin C to your dessert! These berries may help fight inflammation, improve your cholesterol levels and beautify your skin.

You can use organic coconut cream from Thai Kitchen, or try CocoWhip! I love both, however I used CocoWhip this time. It’s basically a healthier version of Cool Whip and can be found in your grocery store’s freezer next to the Cool Whip. Chop up a few of your favorite nuts and add them in for a crunchy texture. The tart berries mixed with the creamy coconut and crunchy nuts makes for a deliciously satisfying dessert, breakfast or healthy snack option. If you’re entertaining for brunch or a party and need a fun trifle dish, check this one out! It’s beautiful and cost effective 🙂

Very Berry Coconut Trifle

Ingredients

Layered Trifle
  • 6 organic strawberries, sliced
  • 1/2 cup organic blueberries
  • 5.3 oz container Unsweetened So Delicious Coconutmilk Yogurt Alternative
  • 1 Tbsp chia seeds
  • 1/4 cup chopped walnuts (or nut of choice)
  • 1/2 tsp honey (optional)
  • 1 Tbsp fresh squeezed orange juice + zest
  • sprinkle of cinnamon (optional)
Toppings
  • 5-6 walnuts, chopped
  • 1 dollop of CocoWhip
  • Sprinkle of cinnamon

Instructions

1. Wash and slice strawberries
2. Place berries into a small bowl and add orange zest and juice
3. Open coconut milk yogurt, mix in honey and cinnamon (if using), and then add the chia seeds.
4. Chop nuts
5. Start layering your trifle! Add a layer of berries, followed by a layer of yogurt, then add your chopped nuts. Keep repeating the layers.
6. Finish with a dollop of CocoWhip, chopped nuts and a sprinkle of cinnamon! Enjoy!
